- 8 bacon slices
- 2 packages frozen corn (about 12 oz each)
- 1 small onion
- 2/3 cup chopped bell peppers (assorted colors)
- 1 (8 oz) package cream cheese
- 1/2 cup milk
- 1 tsp sugar
- 1/2 tsp salt
- 1 tsp pepper
Cook bacon in a skillet until crisp. Remove and drain. Reserve 2 tbsp drippings in skillet. In the meantime, steam corn in the microwave according to package directions. Add onion and bell pepper to skillet over med-high heat and saute until tender crisp. Add corn to skillet and stir to combine. Cut cream cheese into cubes. Add cream cheese and milk to skillet. Stir until cream cheese melts. Stir in sugar, salt, and pepper. Put entire mixture into a casserole dish. Chop bacon into pieces and sprinkle on top.
All that is left is for you to dig in and enjoy! This is one of those recipes that seem to get even better the next day.
