Today I am partnering with the American Cancer Society to bring you a healthier recipe for my peanut butter pancakes. Head on over to A Healthier Holiday Table for even more healthy takes on various recipes. Now lets get started making some pancakes.
Healthier Peanut Butter Pancakes
2 cups flour (1 2/3 cup white, 1/3 cup whole wheat)
1 tbsp baking powder
1 tbsp milled flax seed
1/4 tsp salt
3/4 cup creamy peanut butter
1/4 cup honey
2 tbsp vegetable oil
2 1/4 cups milk
Mix all ingredients together well. Pour out onto a greased griddle. Flip when bottoms are brown and bubbles form on the top.
This recipe makes a huge stack of pancakes. I take them and layer with freezer paper in between then place in a freezer bag. Freeze until needed. You can pull them out of the freezer one at a time in the morning. These don’t really need any topping. They are great on their own. If you want, you can add just a light dusting of powdered sugar.
