 When I was asked to do a series of posts this year sponsored by International Delight, I took one look at their wide variety of creamers and jumped at the chance. This is my first post and trust me this Cold Stone Creamery no bake cheesecake recipe will knock your socks off. This is a great summer dessert because you don’t even have to turn on the oven. Plus with only 6 ingredients — it does not get much easier than this.

Cold Stone Creamery Cheesecake Recipe -- a great no bake cheesecake recipe that will leave you wanting more!

Cold Stone Creamery No Bake Cheesecake Recipe

1 cup graham cracker crumbs

1/2 stick butter (melted)

1/4 oz envelope unflavored gelatin

1 cup boiling water

8 oz cream cheese (softened)

1 1/2 cups International Delight Cold Stone Creamery Sweet Cream flavor creamer

Mix graham cracker crumbs and melted butter. Press on bottom and up sides of a 9 by 9 inch pan. Set aside.

Mix unflavored gelatin with boiling water. Put in refrigerator to cool. Once cool and starting to congeal continue with next step.

Whip 1 1/2 cups creamer with an electric mixer for 2 – 3 minutes. Add softened cream cheese alternately with gelatin mixture a little at a time while continuing to whip on medium or high speed.

Pour entire mixture into graham cracker crust. Refrigerate at least 4 hours before serving.

Add additional graham cracker crumbs to the top if desired for garnish before serving.
