Ingredients
- 2 8 oz packages cream cheese room temperature
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 12 duplex sandwich creams or oreos
- 1 can blueberry pie filling you can substitute any pie filling you like
Instructions
- Preheat oven to 350 degrees. Put paper cupcake liners in a 12 cup muffin tin. Beat cream cheese with a mixer until fluffy. Add sugar and vanilla. Continue beating. Add eggs and continue to beat. Place a duplex sandwich cookie in the bottom of each lined muffin tin. You can also use Oreos but I love the duplex here. Spoon your cream cheese mixture over your cookie. Fill the muffin tin to the very top. Carefully put in the oven and bake for 20 minutes. Remove from oven and allow to cool. Spoon 1 heaping tablespoon of pie filling on each mini cheesecake once cool. Serve and enjoy. Recipe makes 12 mini cheesecakes.
