Cranberry Granola with White Chocolate

Make this white chocolate granola for breakfast or a snack any time of the day!

What You Will Need

  • 2 cups old fashioned rolled oats be sure to use gluten-free if you have allergies or nut allergies
  • 2 tbsp olive oil
  • 1/3 cup white chocolate chips you will want to look for a brand that is allergy-friendly if you have issues
  • 5 oz package dried cranberries
  • 2 tbsp honey
  • 1 cup walnuts omit for nut allergies

Instructions

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.
  • Mix together oil and honey.  
  • Then toss with oats to coat.  
  • Spread oats evenly on the prepared cookie sheet.  
  • Bake for 16 - 20 minutes until lightly toasted throughout. NOTE: Be sure to toss occasionally for even toasting.  
  • Then remove from the oven.
  • While still hot, mix oats with white chocolate chips. The chocolate should create clusters of granola.  
  • Let granola mixture cool then add walnuts and cranberries.  Store in an airtight container. Serve with milk for breakfast, over yogurt, or just grab a handful anytime.
