Soft Lemon Cookies

What You Will Need

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 large lemons
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter at room temperature
  • A large egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1/2 cup granulated sugar for rolling cookies

Instructions

  • Preheat oven to 350 degrees F. I also like to add parchment paper to my baking sheets to prevent sticking.
  • Mix dry ingredients in a small bowl first (flour, baking soda, baking powder, and salt).  Mix well and set aside.
  • In another bowl, beat together the butter and 1 1/2 cups granulated sugar.
  • To the butter mixture, add the lemon zest, egg, vanilla, and lemon juice.
  • Stir until combined then start adding the dry ingredient mixture.
  • Mix well but do not over mix.
  • Roll rounded tablespoons of your dough into balls.  Roll in granulated sugar.
  • Place balls on your cookie sheets at least 2 inches apart.
  • Bake 7-9 minutes or until cookies are just starting to brown and crack on the top.  BE SURE NOT TO OVER BAKE!
  • Remove from oven and allow to sit about two minutes before removing with a spatula.
  • Cool on a cooling rack then enjoy!
