Carrot Wacky Cake

What You Will Need

  • 1 1/2 cups all purpose flour + 3 Tablespoons
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 cup finely grated peeled carrots
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup golden raisins
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla
  • 5 tablespoons vegetable oil
  • 1 cup water

Instructions

  • Preheat oven to 350 degrees F.  Grease and flour an 8" baking pan.
  • In a large mixing bowl, mix the first 6 ingredients until well blended. Add carrots, nuts and golden raisins.  Mix well.  Add the vinegar, vanilla, and oil.  Pour water over the top.  Mix well and pour in prepared pan.
  • Bake for 35 to 45 minutes. Check that the cake is done with a toothpick.  When inserted in the center, it should come out clean.
  • Remove from oven when done and allow to cool.
