Turn on your slow cooker and add in the water, oil, cinnamon, brown sugar, red pepper, cumin, salt, and garlic.
Stir until sugar is dissolved.

Top with onions and peppers.
Cover and cook in your crock pot on high for 4 hours or on low for 6-8 hours.
Shred pork in slow cooker.
Add corn and beans and cook 15 minutes or until heated through.
Make the rice according to the package directions while heating.
Add rice to slow cooker and stir.
