118.3 ounce package brownie mix with ingredients for making cake-like brownies
18 ounce cream cheese, room temperature
1cuppowdered sugar
1teaspoonvanilla
1cupmilk chocolate chips
1teaspooncoconut oil or vegetable shortening
Fruit for decorating: kiwistrawberries, blueberries
Instructions
Preheat oven to 350 degrees.
Prepare brownie mix according to package directions for cake-like brownies.
Spritz two 9 inch round cake pans with non-stick cooking spray. Line with parchment paper and spritz again. Then divide the brownie mix between the two pans.
Bake the brownies for 15 to 20 minutes or until the middle is set. Remove from oven and then allow to cool completely. Remove from baking pans before decorating.
In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla. Mix until smooth.
Prepare the fruit for decorating the cookie. Make sure fruit is washed, dried, and sliced (if needed).
Evenly spread cream cheese mixture over the cookie. Then decorate as desired with fruit.
Melt milk chocolate chips with coconut oil in the microwave for 30 seconds. Stir well. Drizzle over fruit.
Refrigerate until ready to serve. Best if served immediately.
Notes
NOTE: This recipe is enough to make TWO 9 inch brownie pizzas.
