Apple Banana Bread Recipe

What You Will Need

  • 1 tsp butter
  • 3 large apples
  • nonstick cooking spray
  • 1/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup vegetable oil
  • 2 large egg whites
  • 3 over ripe bananas
  • 1 tsp vanilla extract

Instructions

  • Peel, core, and thinly slice the apples. Mix the butter and the apples on the stove and cook covered over medium heat until tender. Mash or puree apples once tender.
  • Coat a loaf pan with non stick cooking spray. Preheat the oven to 350 degrees.
  • In a medium sized bowl, mix flours, baking soda, baking powder, salt, and cinnamon. Set aside.
  • In a large bowl, mix sugar and oil until well blended. Puree or mash bananas and then add to the mixture. Stir in egg whites, apples, and vanilla until combined. Add in flour mixture and stir until just combined.
  • Pour the batter into the loaf pan and bake 55 - 60 minutes or until a toothpick inserted in the center comes out clean. Cool at least 5 minutes before removing loaf from pan. Serve warm or cool. Enjoy!
