Preheat oven to 350º F and line two baking sheets with parchment paper. Set aside.
Using a stand mixer, beat together butter and sweetener.
Then add eggs one at a time, beating for one minute and scraping the bowl after each addition.
Beat in vanilla extract.
Then add almond flour and baking soda and mix well.
Stir in the chocolate chips.
Spoon about a tablespoon of dough onto the two prepared pans (about 18 cookies).
Bake for 14 minutes, rotating pans halfway through.
Remove from oven and cool on pans for five minutes, then transfer cookies to a wire rack and cool completely, and serve.
