Healthier Peanut Butter Pancakes
Make these pancakes with peanut butter for any morning of the week and you can even freeze the excess for serving throughout the week!

- 2 cups flour 1 2/3 cup white, 1/3 cup whole wheat (NOTE: you can also use gluten-free alternatives here.)
- 1 tbsp baking powder
- 1 tbsp milled flax seed
- 3/4 cup creamy peanut butter
- 1/4 tsp salt
- 2 tbsp vegetable oil
- 1/4 cup honey
- 2 eggs
- 2 1/4 cups milk
Mix all ingredients together well.
Pour about 1/4 cup of the mixture onto a greased griddle.
Flip when bottoms are brown and bubbles form on the top.
Brown the opposite side of each pancake then remove each to a serving platter.
