Healthier Peanut Butter Pancakes

Make these pancakes with peanut butter for any morning of the week and you can even freeze the excess for serving throughout the week!

What You Will Need

  • 2 cups flour 1 2/3 cup white, 1/3 cup whole wheat (NOTE: you can also use gluten-free alternatives here.)
  • 1 tbsp baking powder
  • 1 tbsp milled flax seed
  • 3/4 cup creamy peanut butter
  • 1/4 tsp salt
  • 2 tbsp vegetable oil
  • 1/4 cup honey
  • 2 eggs
  • 2 1/4 cups milk

Instructions

  • Mix all ingredients together well.
  • Pour about 1/4 cup of the mixture onto a greased griddle.
  • Flip when bottoms are brown and bubbles form on the top.
  • Brown the opposite side of each pancake then remove each to a serving platter.
