Chop your green tomatoes, then add to a very large pot.
Shred your head of cabbage.
Seed and chop all peppers.
Chop the onion.
Add all above ingredients to your pot plus the salt and stir.
Combine the vinegar and sugar in a separate pot and bring to a boil.
Pour over your pot of vegetables.
Cook for 20 minutes.
Pour into sterilized jars and process for 10 minutes while covered with boiling water.
Wait at least 4 weeks before enjoying your chow chow.

This is great on beans, chili, nachos, and you can use in any recipe that calls for salsa verde. Plus it looks so pretty in these jars you can give them as gifts as well!
