Banana Bread Cake Recipe

What You Will Need

Cake Ingredients

  • 1 1/2 cups sugar
  • 1 cup sour cream
  • 2 eggs
  • 1/2 cup softened butter
  • 3 bananas mashed
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup chopped pecans

Frosting Ingredients

  • 1/2 cup butter
  • 3 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 tablespoons milk
  • 1/4 cup chopped pecans optional


Cake Instructions

  • Start by preheating your oven to 375 degrees F.
  • Grease a 13x9 inch cake pan.
  • Then start mixing your banana bread cake ingredients.  Beat together the sugar, sour cream, eggs, and butter until creamy.
  • Add in your mashed bananas and vanilla extract.  Stir well.
  • Then add in your dry ingredients of flour, baking soda, and salt.
  • Mix well then stir in the pecans.
  • Spread into your prepared pan and bake for 25 minutes or until brown.  Test to see if the cake is done with a toothpick before removing from oven.
  • Cool a few minutes before adding frosting.

Frosting Instructions

  • Heat butter in a saucepan over medium heat.
  • Cook until it reaches a medium brown color.
  • Then remove from heat and whisk in powdered sugar a little at a time.  Add milk as the mixture thickens.
  • Add in vanilla last and stir.
  • Pour the frosting over your warm banana bread cake immediately.  Smooth with a spatula.
  • Sprinkle with additional pecans if desired.
