Healthy Chocolate Chip Cookies Recipe

What You Will Need

  • 1 stick butter room temperature
  • 1/3 cup low-carb sweetener of choice
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups blanched almond flour
  • 1/2 teaspoon baking soda
  • 2/3 cup sugar-free chocolate chips


  • Preheat oven to 350ยบ F and line two baking sheets with parchment paper. Set aside.
  • Using a stand mixer, beat together butter and sweetener.
  • Then add eggs one at a time, beating for one minute and scraping the bowl after each addition.
  • Beat in vanilla extract.
  • Then add almond flour and baking soda and mix well.
  • Stir in the chocolate chips.
  • Spoon about a tablespoon of dough onto the two prepared pans (about 18 cookies).
  • Bake for 14 minutes, rotating pans halfway through.
  • Remove from oven and cool on pans for five minutes, then transfer cookies to a wire rack and cool completely, and serve.
