Preheat oven to 350 degrees F. I also like to add parchment paper to my baking sheets to prevent sticking.
Mix dry ingredients in a small bowl first (flour, baking soda, baking powder, and salt). Mix well and set aside.
In another bowl, beat together the butter and 1 1/2 cups granulated sugar.
To the butter mixture, add the lemon zest, egg, vanilla, and lemon juice.
Stir until combined then start adding the dry ingredient mixture.
Mix well but do not over mix.
Roll rounded tablespoons of your dough into balls. Roll in granulated sugar.
Place balls on your cookie sheets at least 2 inches apart.
Bake 7-9 minutes or until cookies are just starting to brown and crack on the top. BE SURE NOT TO OVER BAKE!
Remove from oven and allow to sit about two minutes before removing with a spatula.
Cool on a cooling rack then enjoy!
