Cranberry Granola with White Chocolate
Make this white chocolate granola for breakfast or a snack any time of the day!
- 2 cups old fashioned rolled oats be sure to use gluten-free if you have allergies or nut allergies
- 2 tbsp olive oil
- 1/3 cup white chocolate chips you will want to look for a brand that is allergy-friendly if you have issues
- 5 oz package dried cranberries
- 2 tbsp honey
- 1 cup walnuts omit for nut allergies
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.
Mix together oil and honey.
Then toss with oats to coat.
Spread oats evenly on the prepared cookie sheet.
Bake for 16 - 20 minutes until lightly toasted throughout. NOTE: Be sure to toss occasionally for even toasting.
Then remove from the oven.
While still hot, mix oats with white chocolate chips. The chocolate should create clusters of granola.
Let granola mixture cool then add walnuts and cranberries. Store in an airtight container. Serve with milk for breakfast, over yogurt, or just grab a handful anytime.
