If you need a quick weeknight meal, my chicken pepper stir fry recipe is perfect for you. It is easy to make on a weeknight and you can serve it over noodles or even rice. Mix up this delicious one-skillet meal that makes enough for your entire family. Be sure to make my banana bread cake for dessert as well. After all, your family deserves it!
Chicken Pepper Stir Fry
You can actually use any cooked chicken in this recipe. Leftovers from the night before work great or even picking up a rotisserie chicken on the way home from work. That can make this recipe easier than it already is!
Ingredients:
- 1 tbsp olive oil
- 2 bell peppers (sliced) (any color will do)
- 1/2 onion (sliced)
- 6 oz medium egg noodles (or rice if desired)
- 1 tbsp minced garlic
- 1 tbsp grill seasoning
- 1/2 cup honey barbecue sauce
- 1/4 cup soy sauce
- 3 chicken breasts
How to Make Chicken Stir Fry:
- Bake your chicken or use chicken that is already cooked. You can use this recipe for baked chicken breasts if you need it.
- About 15 minutes before the chicken will be done start the rest of the meal. Boil water and cook egg noodles according to package directions.
- Add olive oil to skillet and put over medium-high heat.
- Add sliced peppers. Cook for about 3 minutes and add sliced onion.
- Then cook an additional 3 minutes and add garlic.
- Cook an additional 3 minutes and add grill seasoning. Add barbecue and soy sauce and mix.
- Add drained egg noodles to skillet.
- Once the chicken is done, slice and add to your skillet. Serve with a side salad if desired. Recipe makes 5 servings.
I hope y’all enjoy! This makes a great fast dinner recipe for the weeknight rush. I love recipes that are easy and healthy too. We prefer this with the egg noodles but you can definitely change it up to rice or a different style of noodle. It is completely up to you!
You might even have some fun by serving it up with chopsticks. That is completely optional, however. It will taste the same with a fork but may not be quite as adventerous!
