- 2 tbsp chopped chives
- 2 tbsp chopped fresh parsley
- 1/2 cup grated carrots
- 6 cup shredded cabbage
- 1/2 cup slivered almonds
- 1/3 cup sunflower seeds unsalted if available
- 1/3 cup red wine vinegar
- 1/3 cup olive oil
- 2 tbsp sugar
- salt and pepper
- Mix first 6 ingredients in a large bowl. Mix remaining ingredients in a small bowl with a whisk. Add dressing to cabbage mixture and stir to combine. Allow to sit for at least 1 hour before serving for best taste. Enjoy!
