5 Ingredient Pumpkin Cupcakes with #CoolWhipFrosting and @Walmart #cbias

My  5 ingredient Pumpkin Cupcakes are sure to be a hit at your next fall potluck or just a Sunday treat.  These turned out so great with the perfect spice and texture.  This dessert recipe is definitely a keeper and I am sure you will enjoy them!

So let's get started baking!  Just 5 ingredients?  Oh yes that is all you will need for these.  Best part?  No oil or eggs needed for this recipe!  Yes it is even a healthy version of your typical cupcakes.

You only see 4 ingredients pictured right?  Well the fifth is water so I am sure you can find that around your house! 

Ingredients:
  • Yellow Cake Mix (16.5 oz)
  • Canned Pumpkin (15 oz)
  • 2/3 cup water
  • 1 tbsp plus 1 tsp pumpkin pie spice
  • Cool Whip Cream Cheese Frosting
The size on these ingredients is important.  If you buy a different sized cake mix, be sure to adjust your water accordingly.  Mix cake mix, canned pumpkin, water, and 1 tbsp pumpkin pie spice with a blender until well blended.  Fill lined muffin tin 2/3 full of batter and bake at 350 degrees for 19-24 minutes or until toothpick inserted into the center comes out clean.  Allow to cool.  We are almost ready to frost these beauties.

Cool Whip Frosting can be found in the freezer section of your local Walmart store near the whipped toppings.  Head on over to google plus to see my entire shopping trip for ingredients.  Now you need to add 1 tsp pumpkin pie spice to one container of cream cheese flavored Cool Whip Frosting and mix well.  Then add to the top of your cupcakes.  The added spice makes the frosting perfect for these spicy cupcakes!

Sprinkles and other decoration on top is optional but it does look good right?

I was worried about the texture on these given that they are oil and egg free.  But they are amazing!  The cake is such a great texture and so moist.  I would recommend this recipe to all of you.  Plus it makes your house smell amazing while baking....as a bonus!

What a brilliant idea to replace the eggs and oil by adding pumpkin! I can't wait to try your recipe out on my own family! Of course, the Cream Cheese Cool Whip Frosting sounds like a wonderful, creamy topping!
