Avocado Potato Salad Recipe — perfect for your summer picnics!

I have a great avocado potato salad recipe for you today.  This one is perfect for the upcoming summer picnic season.  You can bring this to your Memorial Day party as well.  A wonderful spin on potato salad that you will adore.

Avocado Potato Salad

  1. 2 avocados diced
  2. juice of 1 lemon
  3. 5 large potatoes (boiled, cooled, peeled, and diced)
  4. 3 eggs (boiled, cooled, peeled, and diced)
  5. 1/2 cup bread and butter pickles (diced)
  6. 2 tbsp mustard
  7. 2 tbsp milk
  8. 1/2 cup mayonnaise
  9. 1/2 tsp season salt
  10. 1/2 tsp pepper
  11. 1/2 tsp celery seed
  12. 1/2 tsp sea salt
  1. Mix avocados and lemon juice in a large bowl to prevent browning. Add potatoes, eggs, and pickles. Stir gently to combine. In a separate bowl mix remaining ingredients. Add to potato mixture and stir. If your potato salad seems dry, add a touch more milk to make it creamy. Refrigerate for 1 hour before serving. Enjoy.
